| HYDROLYZED GELATIN FINECOL 8000 Gelatin
DESCRIPTION: Finecol 8000 is an enzymatically modified gelatin that is prepared especially for fining and clarification. The product remains liquid at ambient temperature and readily dissolves into the juice or liquid being cleared. Finecol 8000 has an optimum molecular weight to rapidly combine its polymers with the haze forming particulates so they drop out of solution.
APPLICATIONS: Use in any application where fining is needed to produce a clear sparkling liquid for products such as apple juice, grape juice, beer, and wine. Use it at a rate of 40 to 60 ppm in the liquid being fined.
The thermo-reversibility of gelatin gels coupled with their typical elastic texture, melt-in-the-mouth characteristics and excellent flavor release gives gelatin-based food products their unique textural and sensory properties, far superior to that of other gelling agents.
Gelatin's unique characteristics give it wide application in the food industry where its functional properties are used to gel, thicken, stabilize, emulsify, bind, film and aerate.
